Cajun Crabcakes

Crabcakes with Cajun seasonings

Ingredients
  

  • 1 pound imitation crabmeat
  • 2 Tablespoons butter or oil
  • 1 cup green pepper diced
  • 1 cup red pepper diced
  • 1 cup green onions
  • 1 Tablespoon lemon juice
  • 1 Tablespoon mayonnaise
  • 1 Tablespoon Dijon Mustard, or favorite mustard
  • 1/2 cup bread crumbs
  • 1 Tablespoon minced garlic (2-3 cloves)
  • 1/2 tsp black pepper
  • 2 eggs
  • 1 medium jalapeno (optional)
Cajun Dipping sauce
  • 1 Cup mayonnaise
  • 1 Tablespoon dill relish
  • 1 Tablespoon Dijon mustard
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)

Equipment

  • 1 blender
  • 1 large bowl 2.5-3 quart
  • 1 small rubber spatula for scraping bowl
  • 1 Cutting board
  • 1 Kitchen knife
  • 1 set of measuring cups
  • 1 Set of measuring spoons
  • 1 fry pan
  • 1 spatula for flipping cooked crabcakes
  • 1 medium bowl for cut vegetables
  • 1 small bowl for mixing sauce

Method
 

  1. Cut up the peppers, and green onions and set aside.
  2. Cut up the crab meat into smaller pieces and place in a large bowl.
  3. Add the peppers, onions and mix well. Add mayonnaise, lemon juice, bread crumbs, Dijon mustard, black pepper, eggs and garlic and mix well.
  4. Remove ½ cup of mixture at a time and add to a blender. Pulse mixer on low using a flexible spatula to move the large pieces to the bottom when needed. The final mix should look approximately like the photo.
  5. Do not try to mix the entire amount at one time it won’t work, I tried.
  6. Take a small amount ¼ - ⅓ cup of the crabmeat mixture, form into a patty and add to a medium low heated skillet and brown on both sides. Approximately 5-6 minutes on each side.
  7. Remove and serve on a bun or toasted slice of bread.
