Chili with Ground Beef

Ingredients
  

  • 1 pound ground beef 80-85% lean
  • 2 medium shallots or 1 medium onion diced
  • 1 medium jalapeno pepper minced
  • 1 medium bell pepper diced
  • 1 medium zucchini squash cut up (optional)
  • 1 15oz. can of red or kidney beans
  • 1 15oz. can of diced tomatoes
  • 8 ounces beef broth
  • 3 ounces tomato paste (1/2 of a small can)
Spices
  • 1 Tablespoon chili powder
  • 1 tsp ground oregano
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp ground cayenne pepper
  • 1/4 tsp ground cloves
  • 2 Tablespoon brown sugar

Equipment

  • 1 Dutch oven
  • 1 spatula
  • 1 Set of measuring spoons
  • 1 Cutting board
  • 1 Kitchen knife
  • 1 medium bowl
  • 1 can opener
  • 1 spoon

Method
 

  1. Cut up the bell pepper, onion/shallot, and the jalapeno pepper and set aside.
  2. Put all of the spices together; chili powder, oregano, cumin, cayenne pepper, smoked paprika, ground cloves and brown sugar, in one small bowl. Set aside.
  3. Heat up Dutch oven on medium heat and brown meat. After ground beef has been browned, remove from Dutch oven, and set aside.
  4. In the beef juices add zucchini squash and bell pepper and sauté for 3-4 minutes.
  5. Add onion and jalapeno and sauté until soft, 3-4 minutes.
  6. Reduce heat to low and add ground beef, beans, tomatoes and garlic. Mix well.
  7. Add beef broth and spices. Mix well.
  8. Add tomato paste and stir well to thicken. This may take some time.
