Spinach and Red Pepper Quiche

A Quiche made with spinach and red pepper

Ingredients
  

  • 4 ounces cheddar cheese
  • 4 eggs, extra large or jumbo
  • 8 ounces heavy cream
  • 1 9" deep dish pie shell
  • 1/2 tsp ground nutmeg
  • 1 pinch salt
  • 1 pinch white pepper
  • 1 1/3 cups diced red bell pepper
  • 5 ounces chopped spinach
  • 3 Tablespoons butter

Equipment

  • 1 12 inch frypan
  • 1 spatula
  • 1 shallow baking pan
  • 1 Kinfe
  • 1 Cutting board
  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 medium bowl for mixing eggs and cream
  • 1 cheese grater
  • 1 plate for grated cheese
  • 1 whisk or fork for whisking eggs and cream
  • 1 wire rack for cooling quiche

Method
 

  1. Grate cheese and set aside.
  2. In a bowl add eggs, heavy cream, salt, pepper and nutmeg, whisk well.
  3. Dice up red bell pepper, set aside.
  4. In a frypan on medium heat, sauté red bell peppers about 5 minutes, remove from frypan set aside on a paper towel to drain.
  5. In a frypan on medium heat add chopped spinach and sauté until wilted about 1-2 minutes.
  6. Poke holes with a fork in the bottom of the 9 inch deep dish pie crust and prebake for 4 minutes at 350 degrees F. Remove from oven and let stand for a few minutes on a wire rack.
  7. Pre heat the oven to 375 degrees F.
Assembling the pie crust
  1. Place the cooked spinach first into the prebaked pie crust.
  2. Add the cooked red bell peppers to the prebaked pie crust.
  3. Add the grated cheese to the prebaked piecrust.
  4. Place a shallow baking pan on the rack of a preheated oven. Place the prebaked piecrust with spinach, red bell pepper and grated cheese on the shallow baking pan of the preheated oven. Now pour the custard mix into the pie crust. (see photo)
  5. By placing the pie crust on the oven rack first, this prevents you sfrom spilling the custard mix.
  6. Bake @ 375 degrees F. for 30-36 minutes. Check at 30 minutes. Should look like this.
