Ingredients

  • 1 chicken breast cut into fillet
  • 1/4 tsp herbs de province
  • 2 dash salt
  • 2 dash pepper
  • 2 Tablespoon olive oil
  • 1 slice pepper jack cheese or cheder
  • 2 slices bread

Equipment

  • 1 Cutting board
  • 1 Kitchen knife
  • 1 frypan 10 inch
  • 1 spatula

Method

  1. Cut the chicken breast lengthwise about 1/2 inch thick
  2. Season with salt, pepper and herbs de province.
  3. At this point you may place back in the fridge for an hour or up to 2 days. You can also freeze at this point for later.
  4. Heat the skillet on medium heat and add oil. Wait until the oil 'shimmers.' Add chicken fillets.
  5. I wasn't sure how large the final chicken breast would be so I cut this in half.
Works great for kids portions! There will be shrinkage during cooking.
  6. Cook for approximately 4 minutes per side. Cook till golden brown.
  7. When finished, remove from heat and place on toast or bun.
How to make toast with the frypan
  1. Place your bread in a dry frypan and turn on to medium heat.
  2. Check the bread occasionally until golden brown. Flip over and repeat.
