This is your classic butter biscuit recipe. You will only need 6 ingredients for this recipe. This is an easy recipe. once you have done this once, then you will understand. This is in my kitchen basics area. I believe anyone can bake these biscuits in their own kitchen. Butter biscuits are easier for you to make than oil biscuits. Why, because they rise easier than the oil versions. There are a couple of things to remember to make these biscuits with butter.

Butter: Real butter and must be cold. We want the butter to be in between all of these folds. If the butter is cold the butter stay in place until baking. This is how you create all of those yummy layers.

Working the dough: Don’t over knead the dough. If you overwork the dough it will become more dense and won’t rise as much.

Stacking the dough: Stacking the dough is how you create the flaky layers.

When cutting out the biscuits with the biscuit cutter try NOT to turn to loosen the cutter. Punch straight down, then straight up. You might seal off the edges and reduce the height of the biscuit.

These can be used with so many meals. You can even just cover with jam and have that as your breakfast.

Ingredients
  

  • 2 1/2 cups flour (bread or all purpose) + extra for rolling
  • 1 Tablespoon sugar
  • 1/2 tsp salt
  • 8 Tablespoons butter or 1/2 cup, cold + extra for brushing on the top of the biscuits
  • 1 1/2 Tablespoon baking powder
  • 1 cup whole milk

Equipment

  • 1 large bowl
  • 1 rubber spatula
  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 baking sheet
  • 1 Pastry knife
  • 1 cheese grater
  • 1 2-2 3/4 inch round for cutting biscuits
  • 1 fork for blending butter in with the flour
  • 1 pastry brush or spoon

Method
 

  1. In a large bowl add, flour, sugar, salt, and baking powder and mix well.
  2. Take a cheese grater and grate the cold butter into the dry ingredients.
  3. Once the butter has been grated, mix in with a fork
  4. Add 3/4 cup cold milk first and start mixing with a spatula. Add rest of milk and continue mixing.
  5. You will want to add most of the milk first. This will help you decide how much milk you need. You may need more that the 1 cup of milk in this recipe. So keep the milk handy until the dough has been formed.
  6. Use your hand and kneed the dough on a floured surface and make a disk about 3/4 inch thick.
  7. Use your pastry knife to divide dough into four parts.
  8. Stack the four parts together and press down with your hand or use a rolling pin into a circle about 3/4 inch in thickness.
  9. Use your pastry knife to divide dough into four parts (second time.) Stack as before and press and roll into a circle about 1/2 inch in thickness.
  10. I like to use a cold rolling pin, I actually use a bottle filled with water i keep in my refrigerator.
  11. Cut the biscuits into rounds with your cutter and place them on a prepared baking sheet.
  12. Brush the biscuits with melted butter. Place in an oven 425 degrees F for 11-14 minutes.
  13. Remove when they are golden brown. Let them cool for 5 minutes. Enjoy!
