Ingredients
  

  • 1 15oz. can black beans
  • 2 bell peppers (cut into strips)
  • 1 large shallot or onion (3/4 cup diced)
  • 3 cloves garlic, minced
  • 1 Tablespoon cumin
  • 1 tsp curry
  • 3 Tablespoon olive oil

Equipment

  • 1 12 inch frypan
  • 1 spatula for frypan
  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 Cutting board
  • 1 Kitchen knife
  • 1 Small Bowl
  • 1 medium bowl

Method
 

  1. Cut peppers into strips; set aside. Cut up onion/shallot and set aside.
  2. Heat oil in a frypan and sauté peppers for about 5 minutes.
  3. Add shallot/onion to frypan and sauté for 2-3 minutes.
  4. Add garlic and sauté for 1 minute
  5. Add black beans and stir well.
  6. Add spices and mix well. Bring up to a boil and reduce heat. Simmer for 5 minutes. Serve over white rice.
