Very Berry Chicken

Very Berry chicken recipe is wonderful option for your table. A delicious chicken with raspberry sauce which can be doubled for your family. This is an easy recipe for your collection. I particularly like it in the summer time when fresh raspberries are in season.

In this recipe you will be cutting the chicken breasts into fillets. This keeps the chicken thinner and consequently helps the chicken absorb the flavor of the sauce. It also helps reduce the cooking time.

This recipe uses boneless skinless chicken and fresh raspberries which makes it a healthy choice for your family.

Very Berry Chicken

Sautéed chicken breast with raspberry cream sauce

Ingredients
  

  • 1 chicken breast, cut into 2 fillets
  • 1/4 cup chopped onion or shallot
  • 1/4 cup heavy cream
  • 2 Tablespoons butter
  • 16 fresh raspberries
  • 3 Tablespoons raspberry vinegar
  • 3 Tablespoons raspberry jam (optional)
  • 2 Tablespoons Rice wine vinegar (optional)
  • 8 cherry tomatoes cut in half (optional)

Equipment

  • 1 small sauce pan
  • 1 12 inch frypan with lid
  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 spatula
  • 1 mixing spoon
  • 1 Cutting board
  • 1 Kitchen knife

Method
 

  1. On a cutting board cut the chicken breast lengthwise to form 2 equal size fillets.
  2. Cut up the onion/shallot and set aside.
  3. Melt butter into 12inch skillet.  Raise the heat to medium add the chicken breast fillets cook for about 3 minutes per side.  Remove from skillet and set aside.
  4. Add onion to the fat in the pan and cook covered over low heat until tender about 10 minutes.
  5. Add the vinegar, raise the heat and cook, uncovered, stirring occasionally, until vinegar is reduced to a syrupy spoonful.
  6. Wisk in the chicken stock, heavy cream and crushed tomatoes and simmer for 1  minute.
  7. Add chicken fillets to the skillet and simmer them gently in the sauce basting them often, until they are just done and the sauce has been reduced and thickened slightly, approximately 4-5 minutes; Do not overcook.
  8. Remove chicken fillets with a slotted spoon and arrange on a heated serving tray.  Add the raspberries to the sauce in the skillet and cook over low heat for 1 minute.  Do not stir the berries with a spoon, merely swirl them in the sauce by shaking the skillet.
  9. place the chicken fillets on a plate and pour raspberry sauce with cooked raspberries over chicken and serve. Enjoy!
