Biscuits and Gravy

This biscuit and gravy recipe is a Southern favorite. In this recipe pork sausage is the base for the gravy. The challenging part is making the biscuits. Not to worry I’ll show you how to do just that. In this recipe you’ll find pork sausage gravy. The easy part is getting the pork juices…just cook up some sausages. Easy. Deglaze the pan with milk add some herbs and viola, your done. If you have the biscuits already made, consequently this is a quick and easy breakfast or lunch.

Ingredients
  

  • 2 1/2 cups flour (bread or all purpose) + extra for rolling
  • 1 Tablespoon sugar
  • 1/2 tsp salt
  • 8 Tablespoons butter or 1/2 cup, cold + extra for brushing on the top of the biscuits
  • 1 1/2 Tablespoon baking powder
  • 1 cup whole milk

Equipment

  • 1 large bowl
  • 1 rubber spatula
  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 baking sheet
  • 1 Pastry knife
  • 1 cheese grater
  • 1 2-2 3/4 inch round for cutting biscuits
  • 1 fork for blending butter in with the flour
  • 1 pastry brush or spoon

Method
 

  1. In a large bowl add, flour, sugar, salt, and baking powder and mix well.
  2. Take a cheese grater and grate the cold butter into the dry ingredients.
  3. Once the butter has been grated, mix in with a fork
  4. Add 3/4 cup cold milk first and start mixing with a spatula. Add rest of milk and continue mixing.
  5. You will want to add most of the milk first. This will help you decide how much milk you need. You may need more that the 1 cup of milk in this recipe. So keep the milk handy until the dough has been formed.
  6. Use your hand and kneed the dough on a floured surface and make a disk about 3/4 inch thick.
  7. Use your pastry knife to divide dough into four parts.
  8. Stack the four parts together and press down with your hand or use a rolling pin into a circle about 3/4 inch in thickness.
  9. Use your pastry knife to divide dough into four parts (second time.) Stack as before and press and roll into a circle about 1/2 inch in thickness.
  10. I like to use a cold rolling pin, I actually use a bottle filled with water i keep in my refrigerator.
  11. Cut the biscuits into rounds with your cutter and place them on a prepared baking sheet.
  12. Brush the biscuits with melted butter. Place in an oven 425 degrees F for 11-14 minutes.
  13. Remove when they are golden brown. Let them cool for 5 minutes. Enjoy!

Ingredients
  

  • 1 lb sausage
  • 4 Tablespoons butter
  • 3/4 cup whole milk
  • 1/2 tsp herbs de provenance
  • 2 teaspoon flour

Equipment

  • 1 frypan
  • 1 spatula
  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 fork to mix gravy

Method
 

  1. Cook sausage in frypan. Remove sausage, set aside
  2. Remove frypan from heat. Add butter and milk stir and deglaze pan.
  3. Add Herb de provenance and flour and stir. Stir to remove lumps.
  4. Return to heat to cook flour, about 3 minutes. This wil cause it to thicken.
  5. Remove from heat when done and reintroduce sausage to pan and stir.
  6. Pour over prepared biscuits, and serve warm.
