Meatloaf

Here is a classic family favorite. Meatloaf is a great way to save money with simple and inexpensive ingredients.

This meatloaf recipe is a simple effective way to feed a family. This recipe will be a family favorite after the first bite. One way you can make this your favorite is by adding your favorite herbs. If you’re not a fan of the sauce you can substitute your favorite barbecue sauce.

Therefore this is not only an easy recipe but a versatile one.

Onions or shallots

I like to saute the onions first, which adds flavor and precooks the onions to reduce some of the harsher flavors that can be associated with them.

Carrots

Grated carrots add moisture and fiber. I use these to keep the meatloaf on the lighter side and keep it juicy.

Lean Ground Beef

I have tried this recipe with 80% lean ground beef and there seems to be a lot of grease at the bottom of the loaf pan, however, using 90% lean ground beef there is noticeably less fat.

Oatmeal

The quick cooking oats will absorb fat and keep it in the meatloaf.

Worcestershire sauce

This is a flavor enhancer! I like the way this flavors the meat. Because there is a little liquid, and helps keep it juicy.

Ingredients
  

  • 3/4 -1 cup Carrot finely grated
  • 2 Tablespoon minced shallot or onion
  • 1 medium Jalapeno minced
  • 1 1/3 – 1 1/2 pounds ground beef 90% lean
  • 1 Tablespoon cooking oil
  • 1/2 cup quick cooking oats
  • 1 Tablespoon Worcestershire sauce
  • 1 tsp minced garlic
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 tsp Thyme
  • 1 Egg

Equipment

  • 1 Set of measuring spoons
  • 1 set of measuring cups
  • 1 Kitchen knife
  • 1 Cutting board
  • 1 2.5 quart mixing bowl
  • 1 10 inch frypan
  • 1 9 x 5 inch loaf pan
  • 1 small bowl for mixing sauce
  • 1 cheese grater
  • 1 small plate for shredding carrot

Method
 

  1. Place all ingredients into a bowl. Mix all ingredients together.
  2. Preheat the oven to 350 Degrees F
  3. Grease a 9 x 5 in. bread pan and place the mixture into the pan.
  4. Do not pack into the pan, however, place it somewhat loosely into the pan.
  5. Cook for 40-45 minutes @ 350° F
  6. Mix 1/4 cup of ketchup and 1/4 cup French salad dressing together in a bowl. Spread mixture on top of meatloaf and let rest for 10 minutes. Serve.
